Pancakes for Dinner
I have never been a morning person, I'd much rather stay up all night cozy on the couch watching tv and then sleeping in until 12 in the afternoon ( of course having kids these days I'm lucky if I get to sleep until 9am). Needless to say I am not much of a breakfast eater or cooker, it's not that I don't like breakfast, I'm just never up in time for it or I don't feel like cooking it (even though it's super easy to cook).
Though my kids may just have to suffer through frozen breakfasts or cereal, every once in a while I get the breakfast cooking bug and make them a bit of a feast. My favorite time of day to eat breakfast is dinner time, I don't know why but breakfast just tastes better then. The other night I got the urge to make breakfast, so I cooked bacon, scrambled eggs with cheddar cheese, hash browns, and pancakes.
*How I cooked it all- I cooked the bacon on the griddle first, so that I could use the hot grease from the griddle while cooking the rest of the food (not healthy I know but so good!). If you want fluffy eggs add a splash of milk, and do not over cook the eggs. Also, as far as the hashbrowns go they were actually tator tots that I thawed, then cooked on the griddle until crispy on the outside and then I smooshed them down and chopped them up with a spatula.
Now the best part of the meal was the pancakes, I usually just buy a box of pancake mix (the good kind that you add eggs and milk too) but this time I went the lazy route and used the shake and pour, and they still tasted delicious and were thick and fluffy. After the pancakes were done I put them on a plate and added butter while they were still hot, then to make the pancakes even more tasty I added crunchy peanut butter (my favorite), a chopped banana, and some butter flavored syrup, these pancakes were amazing! If you've never hade crunchy peanut butter, banana, and syrup pancakes you are definately missing out, and if you have had crunchy peanut, banana, and syrup pancakes or you know of an even better pancake combination then leave a comment below and maybe I'll try it out!
