Salad Pasta
One of my
all time favorite salads is a Caesar salad, “the crisp romaine lettuce, tender
chicken, creamy dressing (not the healthiest, but so good!), topped with some
parmesan cheese and croutons,” I get hungry just thinking about it! So, the other day, after getting a major
craving for a Caesar salad I decided that I was going to make one for dinner;
in order to make it more appetizing to my kids I added some pasta noodles along
with a few other ingredients and it was a huge hit! Since my family (kids especially) enjoyed
this meal so much I thought I would share it with y'all!
Ingredients
- Caesar Dressing- 16oz bottle
- Romaine Lettuce- 1/2 head romaine
- Parmesan Cheese- 6oz fancy shredded
- Chicken Breast- 1 chicken breast
- Farfalle (Bowtie) Noodles- 6oz
- Croutons- Caesar croutons
- Bacon Bits- Real bacon pieces, 2.5oz bag
- Cucumber- 1 whole cucumber
- Cherry Tomatoes“Now, let’s get cookin!”
- Cook the noodles until tender, about 10-12 minutes, once done put into a bowl big enough to mix all of the ingredients.
- While you are waiting on the noodles, cook the chicken. I had an already cooked chicken breast left over from dinner the night before, so I just chopped it up and threw it in the bowl. *If you need to cook your chicken breast I would suggest pouring about a tablespoon of extra virgin olive oil in a pan and cooking for about six minutes (give or take) on both sides on medium heat.
- Next you’re going to use a half a head of romaine; clean the romaine, chop it up, then put it in the same bowl with the noodles and chicken.
- Then clean and cut up the cucumber (cut in quarters) and tomatoes (cut in half) as well. I’m not a big fan of tomatoes, so I only used a handful of them; it’s completely up to you how many you want to add.
- Once all of the veggies are chopped and everything is cooked and in the bowl, add the parmesan and bacon bits. I used about 4oz of parmesan and 2oz of bacon bits.
- Add 8oz of Caesar dressing, and then mix all of the ingredients, making sure everything is coated with the dressing.
- Put the pasta salad mix in the fridge, covered, for at least 2hrs.
- When the 2hrs. are up take the pasta salad out of the fridge, add the rest of the Caesar dressing, top it with the rest of the parmesan and bacon bits, and add a handful of croutons.
